The smooth, green leaves are used like ordinary parsley. The root, which is thick and reminiscent of a white carrot, can be used like parsnips. Can be sown both in late fall for overwintering in milder parts of Norway, and in early spring. Harvest the leaves gradually and the roots in late fall. Thrives best in porous, nutritious, deeply dug and moldy soil. In clay soil, the roots become branchy. Water during drought.
